ROSEMARY LAMB CHOPS
Rosemary Salt
Ingredients
4 sprigs of rosemary
2 tablespoons garlic powder
2 tablespoons flaky sea salt
Method
Strip the rosemary leaves from the stems and add them to a spice grinder until finely ground.
Add the garlic powder and flaky sea salt and blend until combined.
If you do not have a spice grinder, you can also do this with a pestle and mortar.
Truffle Parmesan Chips
Ingredients
2 large potatoes
Rosemary salt
Olive oil
Parmesan
Truffle oil
Method
Cut the potatoes into chip shapes and place them into a bowl.
Sprinkle over the rosemary salt and drizzle with 1 tablespoon of olive oil. Mix well.
Place into the air fryer for 15 minutes at 200°C.
Once cooked, drizzle with truffle oil and mix.
Finish with grated Parmesan before serving.
Rosemary Lamb Chops
Ingredients
8 lamb chops
Large knob of butter
Rosemary salt
Method
Sprinkle both sides of the lamb chops with rosemary salt.
Melt the butter in a large frying pan.
Once the pan is coated with butter, add the lamb chops.
Cook for approximately 2–3 minutes per side for medium rare.
Allow them to rest for 5 minutes before serving.
Simple Salad
Ingredients
1 head of romaine lettuce
10 vine tomatoes
3 baby cucumbers
1 shallot
Olive oil
Juice of ½ lemon
Salt
Black pepper
Method
Chop the lettuce, tomatoes, cucumbers and shallots, then add to a bowl.
In a separate bowl, combine olive oil, lemon juice, salt and black pepper to taste.
Pour over the salad and toss before serving.
There is something so satisfying about a meal that feels a little special without being complicated.
Between the buttery lamb chops, crispy chips and fresh salad, this is exactly the sort of dinner I find myself craving time and time again.
